I had been looking forward to this meal all day.

First, I steamed the veggies separately (sweet potato & spaghetti squash) for the mashed mix.  I fried the ripe plantain…adding the other pan ingredients at the end to make sure they stayed crispy.

Ingredients

Steamed spaghetti squash (mash)
Steamed sweet potatoes (mash)
Fried plantains (pan)
Red bell pepper (pan)
Carrot (pan)
Green onion (pan)
Parsley (pan)
Spring mix

Seasoning

-Miso (mash)
-cumin (mash)
-rosemary (mash)
-paprika (mash)
-sea salt (mash)
-cayenne (mash)
-lemon (mash)
-Apple cider vinegar (finish)
-Liquid aminos (finish)

As you see below, I put the spring mix on the bottom of the bowl, then put the mashed sweet potato and spaghetti squash on top.
