We are heading to NYC for business. My food options are going to be extremely limited until we get settled in and go find something healthy. I prepped our papaya smoothie the night before, and steamed some sweet potatoes so I knew I was covered for 2 meals. I like my sweet potatoes to have cooled before I eat them. The texture is more desirable this way so I steam them the night before.
Here we have sweet potato layered with banana, cayenne pepper, and cinnamon with a little coconut milk over it. This traveled really well, and was a very delicious meal for me to have on the road and in the hotel room.
