I’m a big sandwich person!  They are not just a lunch for me!  Last night I made some absolutely amazing sandwiches!

A vegetable sandwich and salad are now going on my weekly menu more than once!  The recipe will constantly be changing so it will be fun to share my favorites!  It’s easy to make unhealthy sandwiches and I know I have my favorites, so what I am doing is creating amazing alternatives!  I must say that my absolute favorite sandwiches are made at home.  I find it so much fun to mix specific textures and flavors while using healthy ingredients.  I enjoy the rewarding taste without the guilt unhealthy ingredients bring.  I hate regretting what I eat, so I try to make the things I love with low guilt ingredients.  My sandwiches are even more delicious than the low quality versions at a typical sandwich shop or restaurant, promise!

That’s not to say I don’t ever eat out and indulge in restaurant sandwiches, soups, salads, etc.  I always try to find and frequent high quality places to eat…ones that use quality ingredients.

When I eat food from a restaurant I always try to create the healthiest option by mixing and matching ingredients they have.  Looking at a menu and kindly asking for a custom order should be no problem.  If a restaurant won’t let you do this then try ordering off the sides menu.  Get 2-3 vegetable dishes like sweet potato, broccoli, and spinach or tomato soup, rice, and salad.

Don’t be afraid to ask for what you want, but be flexible just in case your options are limited.

Most of all, enjoy what you eat!

Here we have my nut and vegetable pâté on rye I made last night!  Got requests for seconds!  I wish I had one hot and ready right now, it was THAT good!
